Rainy Rerun

It started raining last night (which I have to admit was pretty
soothing to sleep through) but is showing no signs of letting up. BOO!
At least that is why they invented cute Roxy rain boots to keep a
girl’s feet toasty and dry.

I have big plans to get some new recipes going for the blog and my
sanity. I realized today just how dire things are as I literally had a
repeat meal for breakfast, lunch, AND dinner! I really need some
creativity in my life and diet. I am hoping the re-structuring of the
blog (Coming November 5) will help with that.

Breakfast was a smoothie and a slice of whole grain toast with organic
peanut butter. While I love love love this combination I think my
smoothie recipe list needs to hit a growth spurt. Do you have a
favorite smoothie recipe you think I should try?

Lunch was left over vegetable soup from last night and a pear (not
pictured). Even though this meal was also a repeat it felt pretty
great to have some warm soup after a morning of non-stop work,
especially since said work took me all over town.

Dinner, my personal favorite meal today, was my spinach salad that I
am oh so fond of. While I should really expand my horizons a touch, I
still contend there is nothing better than a warm spinach salad. YUM!

Today’s only “non-rut” food was a pumpkin whoopie pie with maple cream-cheese filling. I normally don’t do desert during the week but this was so tasty!

I am settling in with my pups to finish out this rainy day, relaxation
style. Do you ever get the rainy day blues? Do you ever get into a
food rut?

Bright and early today I met up with my friend Kristen at Panera Bread in order to start planning our Christmas trip to New York. Kristen and I, along with our longtime besties Nichole and Tiffany, will all be traveling together for what I am sure will be the busiest weekend ever! We had to go over those pesky details like train tickets, finding a hotel, deciding what to see on Broadway and looking up fantastic food and shopping. We figured in order to divide and concur we would just meet for some brunch and get the task done as a two-some. We found a corner, unloaded all of our gear and got right to work!

After having a long debate over plan versus train (the train won out) we decided to grab some early lunch/brunch. Today I went with my favorite combination at Panera: The Low Fat Vegetarian Black Bean Soup and 1/2 Cuban Chicken Panini. The Spicy chicken and pickles on the panini are the perfect compliment for the rich bean soup. Also, this combo is a pretty healthful choice with all things considered. YUM!

After about an hour of travel site checking, one mango smoothie, and 20 side tracked conversations later, we decided to take a break from Panera (IE: We were booted off the internet) and mosey across the street to Kohls for some shopping.

Can I just say the Simply Vera Collection by Vera Wang for Kohls is rocking my socks right now? I just adore her pieces and the price points are pretty great too. We will not however get into the fact that a certain someone in my life is considering jacket from Kohls by a Miss Lauren Conrad. Ahem. Personally, I loved The Hills (I know I should be ashamed) so I kind of enjoy LC’s collection at Kohls but said pal mercilessly mocked my Hills fascination so I am kind of loving her love for this jacket. Teehee.  I am on a tight tight budget right now so I only picked up one thing on our shopping adventure today, this awesome slouch hat. Katherine Heigl wore a couple of these in Life As We Know It and I decided I needed one. Very cute and stylish for fall!

We finished up our working brunch at my house. How super serious do we look in that photo? Luckily everything is planned and now its all over but the waiting! Countdown to Christmas in NYC if officially on!

PS: In honor of my pals little sweetie dressing as “the cutest bee ever” for Halloween I have added a handmade bee hat to my Open Sky Store. Check it out HERE

Ahhh you know what they say about the best laid plans…. One of my best girlfriends Kristen and I had planned a “do-over” of our Twilight day out a couple of months ago.  However, after some early morning issues and a late start we decided to nix our plans and go a different route. Kristen arrived in town just in time for us to head over to Magnolia Foods for a perfect Saturday lunch.  I chose to get my favorite: a Turkey, Swiss, Apples, and Spicy Honey Mustard on whole grain. (a number 3 should you want to order it yourself. ) 😉 Since Saturday is my flex day I also ordered a cupcake. Magnolia’s cupcakes are amazing and something about the vanilla reminds me of my Grandmother’s cakes so I love them!

After some talking and lunching Kris and I headed out for some shopping..Five hours of shopping to be exact. There were shoes (80.00 9 West flats for 15.00! – thank you Macys), sweaters (50 off 100 coupon and NY and Co) and even leather jackets (well at least for her. Not that I wouldn’t love one!). We got some killer deals and I am pretty certain we are all stocked up for a fashionable fall! It was a good thing we ran out of time because my little bug ran out of space to put everything!

It was a great day and the start to a great weekend. I took a little blog break over this labor day weekend but I am back tomorrow with blogs on the regular! Have a Happy and Healthy Week!

Sunday is usually my hang out at home, go to the grocery store, maybe see a movie, lazy day. However, today I had a Sunday jam packed full of fun and happy goodness.  I am much too exhausted to give you all of the details but it involved

  • A favorite (quick) breakfast
  • Traveling to Roanoke
  • Brunch at a place I love
  • A trip to BubbleCake (which I will not be partaking in the consumption of until later in the week)

  • Movie watching with the hubs when I finally made it home.

One of today's fall purchases (LOVE)

How was YOUR weekend??

Isn’t there just something about a Friday? Even when I have a full day at the office like I did today there is still just something magical in the air when Friday comes around. It is like some collective consciousness of freedom and fun is just all around you. This Friday, like so many before it, definitely did not disappoint (well for the most part).

I started off my Friday super excited with my newly cut and colored hair. I saw my hair guru Caleb Thursday night at Anthony and Company in Lynchburg and he did a great job touching up my “Killers” hair cut. I also decided to wear the cute Elle cream t-shirt I picked up at Kohls a few weeks ago. I paired it with black pants, gold Jessica Simpson flats, and a lavender COACH bag. I also grabbed my second biggest pair of gold sunglasses to complete the look.

I completely forgot my breakfast this morning and I was stuck at the office all morning with no way to run out and grab a meal/snack. I thought that eating something was better than nothing so after inspecting my options (cookies, chips, Doritos..you get the idea) I settled on a bag of Sun Chips. Not the best breakfast obviously. But, there was some whole grain and fiber involved and only 3 grams of sugar. So I counted my 210 calories (or 4 points) and went on with my day.

The office was really quiet today. I think a lot of people are using flextime or vacation days to get a head start on the weekend. (Smart move!) But a quiet day also means a day of getting things done. I have to earn my keep after all!! 😉

I did manage to sneak in some hubs time during my lunch break. We headed over to The Depot Grill for an early (and quick) lunch. I decided on an awesome grilled summer veggie sandwich. There was a spinach and artichoke base topped with grilled onoins, squash, carrots and peppers, then topped with havarti dill cheese and sprouts. YUM! I made it about 1/2 way through my plate but it was so good.  We also sat outside which was SO incredibly nice in this weather.

After wrapping up my day at the office I headed over to the groomer to drop off my first “born” Carrie for a cut and bath. She needed it. BADLY! Isn’t she cute so fresh and so clean sporting her most prissy puppy pose??

The hubs and I decided on a quiet date night since things have been so hectic lately. The most recent annoyance being someone opening our fenced in yard, breaking into our shed, and stealing the hub’s custom mountain bike. We live in a good area so we are pretty upset about this.  After calling the police and our insurance company we went to Panera to grab a quick dinner. I had a ½ size serving of soup and a 1/2 size bacon turkey bravo.

I am extra excited for a girls’ day out tomorrow! Stop by to see the adventures of two grown women drooling over Eclipse (and some food and shopping fabulousness too!) It is Running In Pink Project Eclipse Additon!

After my kick in the face that was Monday I was slightly apprehensive
about what might be in store for me today. It would turn out I had
nothing to be afraid of. Today was run of the mill ordinary and that
was just fine with me!

I was re-reading some old blogs of mine last night and was annoyed at
how much “talking” and not doing that I have been doing lately. I talk
about how I am going to change things up and I talk about why I feel
the way I feel. I talk about making plans for change and it seems I
just talk talk talk without doing much of anything lately. I think the
reason behind it is that I had plateau-ed and I wanted to do anything
but deal with how I was feeling. Stuck at 35 pounds with so much to
lose feels frustrating. It also feels like an excuse to get agitated
and slip (just enough) into some bad habits. BUT with that identified
it is time to put on my grown up pants and do something. So I did
(am).

I am back to strictly counting Weight Watchers points and following
the good health guidelines. A rundown of my food today looked like
this:

Breakfast was a whole grain slice of toast with one egg, some sugar free juice, and fresh berries. Yum!

Lunch was left over whole grain pasta with veggies, ground turkey and white cheese sauce.

My mid-afternoon snack was yogurt and Bare Naked granola. I HEART this granola. It might just be my fave.

Tonight’s dinner is on the stove: White Bean Chicken Chilli.

I am back on a regular workout schedule. Today was 60 minutes at the gym and tomorrow will be the same plus 30 minutes of cleaning my car.If you don’t think car cleaning is a workout then you aren’t doing it right. 😉 The wonder-bug will be most pleased to be cleaned!

Yesterday marked the 2-week countdown until I start training for the
Disney Wine and Dine ½ Marathon. (July 12) I cannot wait to have that
drive and purpose spurring me forward again.

In other, more depressing news, I am still working on getting those
last couple of re-gained pounds off that showed up during my brilliant
“don’t be a slave to the scale challenge”. Ahem. Live and Learn.

Since Monday is technically a holiday I cannot resume official
weigh-ins until July 12 but rest assured I am monitoring twice weekly
at home and will be back to weekly weigh in reports on July 12.

Also, the hubs and I are on a mission for a more active summer.
Instead of movies and ice cream we are going for swimming and
grilling. I am thinking of taking up tennis .I WILL bike that 5 miles
before the summer is over. I am just doing whatever I can to change
our lifestyle not just our bodies.  What is your favorite summer fun
activity?

Finally, all of the fun changes I have been teasing for the blog will
be up and running by late August. Sometimes Fabulousness takes time
friends. Hmmm maybe I should keep that in mind for myself too. 🙂

The weekend has been full of some great workouts and physical activity but also full of great food. Since food is a part of the fitness, food, fashion, and fun that is my blog I thought I would highlight some of my favorite weekend “eats”.

Friday night the hubs took me to dinner at Water Stone in Lynchburg, VA. Water Stone is a trendy and fun “fire roasted” pizza eatery in downtown Lynchburg. Water Stone is great because it is this little gem nestled in between all of these random old buildings. Plus once you go inside it has a very laid back ambiance and feel. They have tons of local beer, some of the best specialty martinis ever (Dirty Shirley is the best!) and great pizza. The pizza’s are some of the best I have ever had as they start with a vegan thin crust and top them with super fresh ingredients like spinach, fire roasted tomato, goat cheese etc etc. During our date we chose the fried green tomato stack: 3 slices of fried green tomato on a bed of pesto with fresh mozzarella and grape tomatoes topped with a balsamic vinaigrette and a blackened chicken pizza with spinach, sliced tomato, red onions, and red pepper flake. It was perfect! A great way to get your pizza fix without being stuffed or downing a million calories.

After the race on Saturday we headed over to spend the day with the hub’s family. I have a little family so I really lucked out marrying into a HUGE family.  Friends also stopped by too and it was a great fun in the sun kind of day.

Bryan and I headed over right after the 5k. We were apparently both feeling the plaid since we both ended up wearing it. I had to smile as I thought last summer I could barely cram into those shorts. I am talking lay down on the bed to zip them kind of cram. This weekend I could take them on and off without unbuttoning or unzipping them. Another 5 lbs and they wont be wearable at all. 🙂 I guess I need to go plaid shorts shopping!

I love love love a cookout. grilled meat and veggies could quite possibly be my most favorite thing to eat. There is just something about the taste of grilled food. Can you pick out my organic chicken amongst the burgers and hotdogs? If you are in doubt, take your own stuff. People won’t mind making it for you. Honestly, your family and friends will get used to it and it will be just another item to throw on the grill.

I sampled several things (I heart a pot-luck type event) but didn’t take a ton of any one thing except… Except for my veggie pasta salad. I knew it was super low calorie. This is the easiest thing to make for cookouts. Plus its mayo free so that is a bonus. I  stole borrowed this recipe from my friend Kristen. You make a bag of the “wacky mac” veggie spiral pasta as directed. Cool the pasta (you can run cold water over it) then toss in 1 packet of zesty Italian dry seasoning mix and 1 bottle of fat free Zesty Italian salad dressing (the liquid kind). Stir and put in the fridge until cookout time. Yum!

Also, since Saturday is my dessert day I had some fantastic cake (not pictured). I LOVE a cake with fresh strawberries. The weather was gorgeous for a cookout. Pretty blue skies and white fluffy clouds.

In order to burn off some of that awesome food there were tons of games set up: Volley Ball, Badminton, Ladder Toss, and this fabulous little gem of a game that I am becoming quite skilled at…

What is your favorite cookout game? We were there from 12 until after dark. I have to say a great day of good games/fun/food/family makes for a very tired Me!

This morning the hubs made breakfast (not pictured) and we headed out to see a dollar movie. We saw Bounty Hunter which was totally adorable. I always forget how much I heart Jennifer Aniston. When we got home we decided on peach yogurt, granola, and water for lunch.

Tonight’s dinner was organic tacos on whole grain shells with a side of sliced pears. Tonight’s snack a most fabulous 3 WW point treat…a peppermint patty. I heart those!! I hope you had as fun of a weekend as I did and a happy and healthy week ahead.

Princess cup of coffee in hand I headed in to work this morning. I had super great intentions of getting up early and fixing some eggs this morning. I have REALLY been craving sunny-side-up eggs (I see some of you cringing right now). But, you know what they say about good intentions. Instead I had a Cranbran Vita-top, turkey sausage, and a super-fruit “honest ade”.

Have you ever wondered exactly what is a super fruit? I have. According to www.wisegeek.com “the definition of a super fruit is somewhat arbitrary and has never been set. In most cases, it refers to fruits that have exceptional nutritional quality and taste. In some cases, many fruits may fit under this label.”  My super fruit drink even had a cool little message for me inside-

“If you aren’t going to go all the way, why go at all?” I think that is pretty right on in terms of my fitness and weight loss journey. I liked that my beverage was giving me a pep-talk. It made me smile.

I had last night’s leftovers for lunch and an insanely busy day at the office. It was nice though to have a busy day that felt productive rather than a busy day that just felt busy. I have a love/hate relationship with the 9-5 type lifestyle. Today was a love day.

I was really hungry in the afternoon. I heard once in a weight watchers meeting that a great way to assess hunger is to say, “If you are hungry and looking to snack always have an apple on hand (or other veggie/fruit of some kind). If the apple (or other veggie/fruit) is appealing then eat it; most likely you are hungry. If no veggies or fruits appeal to you but rather you want crackers, cheese, nuts etc you should probably hold off to make sure you are hungry and not just wanting to snack.” This is not fool proof of course but it is a helpful little rule. Turns out I was really hungry and had some deliciously tart apple slices. Mmmm.

I finished work then grabbed more water and a Luna bar before my workout. If you ignore the protein-ish taste (which really is not terrible in Luna Bars) this flavor tastes almost like a “thin mint” cookie or at least to me it does.

I wanted to go running but it was raining (still) and while Ireally love that running in the rain business I did not want to show up to my first Body Pump class soaked to the core. I decided to run 3 miles on the elliptical instead. I love that I can do 3 miles in under 30 minutes on there. If only I could do that on the trail.  I then biked 4 miles and headed in to body pump.  For anyone who might be new to the workout scene body pump ” is the original barbell class that strengthens your entire body. This 60-minute workout challenges all your major muscle groups by using the best weight-room exercises like squats, presses, lifts and curls. Great music, awesome instructors and your choice of weight inspire you to get the results you came for – and fast! Like all the LES MILLS™ programs, a new BODYPUMP™ class is released every three months with new music and choreography.”

If you are anything like me starting a new class like this can feel intimidating. I still feel insecure about my weight, I don’t love to workout in front of other people since I am sometimes scared I cant “hang” with the more fit girls, and I am terribly weak in the arms (hence the need for a class like this!). I lucked out and happened to pick the same class time as my boss from work. She is also an aerobics instructor, former trainer, and all around fitness guru of sorts so I knew she would help me out if I got intimidated. She helped me get all of my equipment for class in order and we got started. Thankfully the class was pretty empty which I hear is rare. I always promised honesty so here it goes. This was hard. There were a couple of moves I just couldnt do. Like push ups. The instructor was nice and I guess she could see the look of sheer panic on my face so she gave me some alternatives to do. My boss was also helping me with that since she used to teach it back in the day as well. Most of the routines I was able to do with very low weights. It worked me out like I probably have not worked out since college and as intimidated as I felt-I loved it. For now, I won’t go without my workout buddy but I am really looking forward to doing it again Tuesday. It’s fast paced, works everything, and is not hard on the joints. Im pretty excited about it.

I for sure earned my dinner and decided to make made a Spinach and Ham Hash. This is actually the first Rachael Ray meal I made successfully way back when. We won’t discuss the tuna putenesca fiasco I had prior to this. Of course I modify this recipe and leave off the cheese. You could also add spices or veggies but essentially you heat a skillet to medium/high heat, add a healthy drizzle of olive oil, dump in sliced organic potatoes adding salt, pepper, and thyme and allow them to start browning up. Then add 1 large sliced onion and allow that to cook up as well. Fold in 1 bag of organic baby spinach and allow it to wilt. Finally, add in some diced or cubed ham (a lean cut). You can also fry an egg and smoosh on top of your serving which is really good. It also took care of my egg craving (or did it make it worse. Im
not sure). The fabulous Rachel Ray would have approved for sure because it was really good. She always says that cooking is a method and you can make any dish a number of ways. I like that.

Tonight I am watching The Office (my favorite) and getting my bag packed for the weekend. I am heading up to Richmond, VA to celebrate my best friend’s 30th Birthday. I have a most fabulous girl’s day planned for her and can’t wait to tell you all about it!

Have a Happy and Healthy Thursday!

Be Thankful Each Day in The Month of May: Today I am thankful for creativity. I love art, music, fashion, and movies. I also love having this blog as my creative outlet. The art of creating (weather though cooking, gardening, decorating etc) can work wonders for a person. We should strive to be creative in our own lives and encourage those
around us to do the same.

I guess I will start out with apologizing for my absence this weekend. So much for my intended breaking news stories through Saturday and Sunday but I think I had a good excuse. I wasn’t just having a lazy day in the sunshine like little Carrie here.

Saturday I woke up bright and early (really early) to make the drive to Roanoke to meet up with some girlfriends. I was really excited to wear the shirtdress I bought several weeks ago. It was comfy and very stylish with the smooshed roses detail on the front. I heart it!

We then made the nearly three hour drive to Durham, NC to see my all time favorite musical Wicked (yes again). My friend Kristen had been thoughtful enough to call around and find some quick options so I was not forced to eat fast food of any kind. We stopped at Panera for a quick soup and sandwich lunch.

Nikki and I had other plans since we spotted a DSW on the way in. Keeper of the time Kristen gave us 20 minutes to get our shopping fix and I ended up with some Sam and Libby ballet flats for the fall. ($12.00 YAY!)

After stopping to let Kris and I show off our matching green pedicures and green bags we were off to the show at the Durham Performing Arts Center.

The show was excellent although I was a little disappointed not to get to see Vicki Noon in the role of Elphaba. I had seen Anne Brummel in the part in Richmond and she was really great but I wanted to see Vicki just to see someone else do it. However, Anne was doing the performance during this show.  My all time favorite Elphaba though has to be Marcie Dodd- no doubt. She was the Elphaba I saw in Norfolk, VA in May of 2009. She was nothing short of amazing! Have you ever seen Wicked?  Do you remember who played Elphaba at your show? I have a little problem: Hello my name is Sara and I am a Wicked pusher. I try to get everyone to see it! You should definitely go if the tour ever comes near you!

During the long 3-hour drive back we stopped at a gas station/Dairy Queen. I was very limited in my options and my friend Kristen even suggested we should take a picture to document this little problem for the blog! All was not lost though as they did have Kellog’s protein bars. Not exactly the dinner of champs but it got the job done.

Sunday was less exciting. I had planned to blog but just never made it that far down my to do list. I should mention that when I got home Saturday night all of the new furniture was here. Woohoo! Yesterday I got the task of trying to get the house back in order. I am so excited to do “the big reveal” later this week and show off my new bedroom! However, yesterday was a headache though I did get to spend some time with the hubs watching TIVOed SNL.

Today started in a rush (me running late?? Shocking I know. ) 😉 I grabbed turkey sausage and vitatop on my way out the door.

Work was non-stop. To be fair, I never have a non-busy workday but today was just out of control busy. I spent the first 2 ½ hours on the phone before I could even start on my to-do list. Luckily all of the hustle and bustle made the day go by quickly. Before I knew it –it was lunchtime. I chose a spinach salad with deli turkey. Mmmmm.

After work I went to pick up groceries for the week and made the hubs and I some Potatoes with Spinach, tomato, onion and Italian spices, corn, and roasted garlic chicken smoked sausage. It was filling and super quick.

I should also mention that I did skip my weigh in as promised. This week is about eating healthy for health’s sake and not the scale’s sake. I am taking a personal/vacation day tomorrow because I still have so much that needs to get done at home. Since I have the day free I plan to spend a little while in the morning doing a 10K (just on my own). Its going to be the Sara Renee Run Because You Love It And Need to Make Running a Priority Again And Also It Has Been A Long Time Since You Did A Long Run and Really Need To Work On That Before Your Real 10K Later This Month 10K. Ahem. Yes. And Since I am the only one running it-that means I win which is also exciting. Hehehe. All joking aside I am looking forward to just me and the trail for 10K in the morning. I will make sure to include all of the fantastic details in tomorrow’s blog (along with my lettuce wrap recipe!). Though I am a touch jealous not to have the super cool new gadget that someone got last week. Hmmm. 😉 I am thinking of investing in one before I start training for the Wine and Dine ½ Marathon.

On a final note- I was told I should say hello to some new readers so welcome Jane and Heather! 🙂

Be Thankful Each Day In The Month Of May: Today I am thankful for my husband. I know I technically covered the hubs under my family entry but I feel very blessed to have someone who loves and accepts me just as I am-flawed and strange and all. He takes care of me when I am sick, cheers me up when I am sad, works really hard so I can do the things I want to do. He ran a princess race with me, sits through musicals no matter how many times I make him go, he never makes me eat the smooshed eggs or burnt toast… Hes my best pal. xo
