Eggs In A Nest

A pal of mine was recently talking about cooking “Toad in a Hole” for his wife. If you don’t know what this is essentially it is an English breakfast that involves eggs and toast (sounds innocent enough right) paired with thick sausage links and onion gravy (ie liquid calories heh) on a plate. Since there is no hollandaise or gravy on the agenda for this girl I decided to make the more health friendly “Eggs in a Nest” as a quick breakfast surprise for the hubs this morning. This is a really basic Eggs in a Nest recipe and all sorts of variations can be found online. Just a note, I am totally buying some Mickey Mouse cookie cutters during our next trip to Disney World. How cute would Mickey eggs in a nest be?!?!

In order to make Eggs in a Nest you will need:

-A thick cut of bread. (I like Natures Own Double Fiber Wheat )
-Organic Eggs
-Butter (I like “light” butter)

First you will butter (very lightly) both sides of the bread.

Next, take a drinking glass and press a hole into the center of the slice (I don’t throw these little guys away. You can toast them up and they are yummy with honey or jam).


Place your slices of bread in a large skillet sprayed lightly with a non-stick spray

After the first side has toasted flip it over, gently crack an egg, and carefully pour the egg into the hole.

Let the egg cook fully, plate, and enjoy!

(Each Egg in a Nest is approximately 4 WW points. Paring one with a side of fruit or low calorie turkey sausage makes for a great easy breakfast choice).

Rainy Rerun

It started raining last night (which I have to admit was pretty
soothing to sleep through) but is showing no signs of letting up. BOO!
At least that is why they invented cute Roxy rain boots to keep a
girl’s feet toasty and dry.


I have big plans to get some new recipes going for the blog and my
sanity. I realized today just how dire things are as I literally had a
repeat meal for breakfast, lunch, AND dinner! I really need some
creativity in my life and diet. I am hoping the re-structuring of the
blog (Coming November 5) will help with that.

Breakfast was a smoothie and a slice of whole grain toast with organic
peanut butter. While I love love love this combination I think my
smoothie recipe list needs to hit a growth spurt. Do you have a
favorite smoothie recipe you think I should try?


Lunch was left over vegetable soup from last night and a pear (not
pictured). Even though this meal was also a repeat it felt pretty
great to have some warm soup after a morning of non-stop work,
especially since said work took me all over town.


Dinner, my personal favorite meal today, was my spinach salad that I
am oh so fond of. While I should really expand my horizons a touch, I
still contend there is nothing better than a warm spinach salad. YUM!

Today’s only “non-rut” food was a pumpkin whoopie pie with maple cream-cheese filling. I normally don’t do desert during the week but this was so tasty!

I am settling in with my pups to finish out this rainy day, relaxation

Sunday is usually my hang out at home, go to the grocery store, maybe see a movie, lazy day. However, today I had a Sunday jam packed full of fun and happy goodness.  I am much too exhausted to give you all of the details but it involved

  • A favorite (quick) breakfast
  • Traveling to Roanoke
  • Brunch at a place I love
  • A trip to BubbleCake (which I will not be partaking in the consumption of until later in the week)
  • Fall clothes shopping (including some really cute sweaters from The Limited)
  • Movie watching with the hubs when I finally made it home.

The Eats:

Yesterday I had a serious problem. The entire day I just felt like I was starving. I am not talking about eating from boredom or stress but rather the “sick to your stomach because you are so hungry” feeling. Sadly, the result was eating pretty much everything in sight at my house last night. Not good. So, I decided to approach this from a healthy perspective and think about why my body felt it needed so much food. I asked myself the following:

  • Did you get enough water/fluids yesterday? (Yes)
  • Did you eat frequently throughout the day? (No)
  • Did you follow your good health guidelines? (Yes)
  • Did you eat a lot of junk the day before? (No)
  • Did you eat a balanced breakfast? (No)

The last question gave me my light bulb moment. I had a healthy breakfast yesterday but not a balanced one. I did not have any substantial protein or healthy fat. I pretty much just had whole grains and fruit. During the Healthy Living Summit I learned at one of the sessions that your morning meal sort of sets the tone for how your body will metabolize food the rest of the day. That is why it is good to eat from all food groups in the morning if you can so your body is an efficient fuel machine for the rest of the day.

This morning I started off with a skim milk latte (1 point).

Then I made some yummy smoothies for the hubs and I. (this recipe makes 2) by blending:

  • 1.5 cups low fat vanilla yogurt (thank you Stonyfield and HLS for the HUGE free sample)
  • 1 large banana
  • 1 ½-2 cups frozen strawberries (buy frozen or freeze fresh the night before)
  • 2/3 cup pineapple juice.

The smoothie ends up with a “point” tally of 4-5 points and you get in 2-3 servings of fruit and 1.5 servings of dairy.

Along side that I had a whole grain reduce calorie English Muffin (1 point) with an egg (2 points) and lean ham slices (1 point).

I used 9 points for this meal but it started my day off on the right foot, I was less hungry throughout the day, and I had buckets of energy.

The rest of today’s eats included two of my “in a pinch” recipes:

Whole Grain Pasta, Turkey Italian Sausage, Spinach, and Parm for lunch

& Veggie Spaghetti for dinner

Spaghetti in a Veggie Sauce

I also snacked on some fruit (not pictured).

I met all of my good health guidelines, easily stayed within my WW points and, most importantly, felt good about my choices.

The Moves:

Today for my Wine and Dine ½ marathon training I jogged 4 miles. That is not a feat for some but I am still impressed with myself when I make it through. I am continuing my jog/walk intervals and feel much more confident about the upcoming run then I did before the Princess ½ last year.

The rest of this week’s moves are shaping up like this

Wednesday Cross Training ( I think I might try Zumba!)
Thursday: 4 Mile Run
Friday: Rest
Saturday: The Long Run (8 Miles)
Sunday: Gentle Cross Training (Yoga or a Bike Ride at 5 miles or less)

I am sure given the title you are expecting to see shoes, a television show, or maybe even make-up of some sort. Luckily though, this new addiction in my life is healthy one. Ever since that fantastic breakfast at HLS I have been addicted to oatmeal.

I can see all of the blogger girls shaking their heads yes and being right there with me. I can see the rest of you looking at me like I am crazy. I will explain the power of the oatmeal.  Quick cooking oats or even instant oatmeal (I like high fiber/low sugar varieties) basically serve as your canvas. This is especially true if you opt for “regular” or “brown sugar” or “maple” type flavors.  Quaker has some awesome options.

Basically you now have the perfect staple for creating your own breakfast masterpieces. You could try combos like:

  • Fresh peaches with a dash of cream
  • Fresh sliced strawberries and bananas
  • Fresh strawberries and mango slices (Yum!)
  • Raspberries and a touch of milk
  • Peanut butter and banana slices

You get the idea. The combos are endless. My feelings are the more fruit and wholesome goodness you can pack in, the better. Since I have been home from the Healthy Living Summit I have created the following combinations…

Raspberries and Raisins (with a touch of brown sugar)

Oatmeal “Cookie” (brown sugar and raisins with milk)

and my favorite……

Barney Butter (almond butter), Bananas, and Rasins

Now I see what all of the fuss is about this stuff. Yum!

So there you have it- My new addiction. I promise with some healthful and yummy add-ins you really can put the meal in oatmeal (heh, bad pun, I know). Seriously though, it is one of those simple meals that can start your day off on the right note!

After my kick in the face that was Monday I was slightly apprehensive
about what might be in store for me today. It would turn out I had
nothing to be afraid of. Today was run of the mill ordinary and that
was just fine with me!

I was re-reading some old blogs of mine last night and was annoyed at
how much “talking” and not doing that I have been doing lately. I talk
about how I am going to change things up and I talk about why I feel
the way I feel. I talk about making plans for change and it seems I
just talk talk talk without doing much of anything lately. I think the
reason behind it is that I had plateau-ed and I wanted to do anything
but deal with how I was feeling. Stuck at 35 pounds with so much to
lose feels frustrating. It also feels like an excuse to get agitated
and slip (just enough) into some bad habits. BUT with that identified
it is time to put on my grown up pants and do something. So I did
(am).

I am back to strictly counting Weight Watchers points and following
the good health guidelines. A rundown of my food today looked like
this:

Breakfast was a whole grain slice of toast with one egg, some sugar free juice, and fresh berries. Yum!

Lunch was left over whole grain pasta with veggies, ground turkey and white cheese sauce.

My mid-afternoon snack was yogurt and Bare Naked granola. I HEART this granola. It might just be my fave.

Tonight’s dinner is on the stove: White Bean Chicken Chilli.

I am back on a regular workout schedule. Today was 60 minutes at the gym and tomorrow will be the same plus 30 minutes of cleaning my car.If you don’t think car cleaning is a workout then you aren’t doing it right. 😉 The wonder-bug will be most pleased to be cleaned!

Yesterday marked the 2-week countdown until I start training for the
Disney Wine and Dine ½ Marathon. (July 12) I cannot wait to have that
drive and purpose spurring me forward again.

In other, more depressing news, I am still working on getting those
last couple of re-gained pounds off that showed up during my brilliant
“don’t be a slave to the scale challenge”. Ahem. Live and Learn.

Since Monday is technically a holiday I cannot resume official
weigh-ins until July 12 but rest assured I am monitoring twice weekly
at home and will be back to weekly weigh in reports on July 12.

Also, the hubs and I are on a mission for a more active summer.
Instead of movies and ice cream we are going for swimming and
grilling. I am thinking of taking up tennis .I WILL bike that 5 miles
before the summer is over. I am just doing whatever I can to change
our lifestyle not just our bodies.  What is your favorite summer fun
activity?


Finally, all of the fun changes I have been teasing for the blog will
be up and running by late August. Sometimes Fabulousness takes time
friends. Hmmm maybe I should keep that in mind for myself too. 🙂

The weekend has been full of some great workouts and physical activity but also full of great food. Since food is a part of the fitness, food, fashion, and fun that is my blog I thought I would highlight some of my favorite weekend “eats”.

Friday night the hubs took me to dinner at Water Stone in Lynchburg, VA. Water Stone is a trendy and fun “fire roasted” pizza eatery in downtown Lynchburg. Water Stone is great because it is this little gem nestled in between all of these random old buildings. Plus once you go inside it has a very laid back ambiance and feel. They have tons of local beer, some of the best specialty martinis ever (Dirty Shirley is the best!) and great pizza. The pizza’s are some of the best I have ever had as they start with a vegan thin crust and top them with super fresh ingredients like spinach, fire roasted tomato, goat cheese etc etc. During our date we chose the fried green tomato stack: 3 slices of fried green tomato on a bed of pesto with fresh mozzarella and grape tomatoes topped with a balsamic vinaigrette and a blackened chicken pizza with spinach, sliced tomato, red onions, and red pepper flake. It was perfect! A great way to get your pizza fix without being stuffed or downing a million calories.

After the race on Saturday we headed over to spend the day with the hub’s family. I have a little family so I really lucked out marrying into a HUGE family.  Friends also stopped by too and it was a great fun in the sun kind of day.

Bryan and I headed over right after the 5k. We were apparently both feeling the plaid since we both ended up wearing it. I had to smile as I thought last summer I could barely cram into those shorts. I am talking lay down on the bed to zip them kind of cram. This weekend I could take them on and off without unbuttoning or unzipping them. Another 5 lbs and they wont be wearable at all. 🙂 I guess I need to go plaid shorts shopping!

I love love love a cookout. grilled meat and veggies could quite possibly be my most favorite thing to eat. There is just something about the taste of grilled food. Can you pick out my organic chicken amongst the burgers and hotdogs? If you are in doubt, take your own stuff. People won’t mind making it for you. Honestly, your family and friends will get used to it and it will be just another item to throw on the grill.

I sampled several things (I heart a pot-luck type event) but didn’t take a ton of any one thing except… Except for my veggie pasta salad. I knew it was super low calorie. This is the easiest thing to make for cookouts. Plus its mayo free so that is a bonus. I  stole borrowed this recipe from my friend Kristen. You make a bag of the “wacky mac” veggie spiral pasta as directed. Cool the pasta (you can run cold water over it) then toss in 1 packet of zesty Italian dry seasoning mix and 1 bottle of fat free Zesty Italian salad dressing (the liquid kind). Stir and put in the fridge until cookout time. Yum!

Also, since Saturday is my dessert day I had some fantastic cake (not pictured). I LOVE a cake with fresh strawberries. The weather was gorgeous for a cookout. Pretty blue skies and white fluffy clouds.

In order to burn off some of that awesome food there were tons of games set up: Volley Ball, Badminton, Ladder Toss, and this fabulous little gem of a game that I am becoming quite skilled at…

What is your favorite cookout game? We were there from 12 until after dark. I have to say a great day of good games/fun/food/family makes for a very tired Me!

This morning the hubs made breakfast (not pictured) and we headed out to see a dollar movie. We saw Bounty Hunter which was totally adorable. I always forget how much I heart Jennifer Aniston. When we got home we decided on peach yogurt, granola, and water for lunch.

Tonight’s dinner was organic tacos on whole grain shells with a side of sliced pears. Tonight’s snack a most fabulous 3 WW point treat…a peppermint patty. I heart those!! I hope you had as fun of a weekend as I did and a happy and healthy week ahead.

I guess I will start out with apologizing for my absence this weekend. So much for my intended breaking news stories through Saturday and Sunday but I think I had a good excuse. I wasn’t just having a lazy day in the sunshine like little Carrie here.


Saturday I woke up bright and early (really early) to make the drive to Roanoke to meet up with some girlfriends. I was really excited to wear the shirtdress I bought several weeks ago. It was comfy and very stylish with the smooshed roses detail on the front. I heart it!


We then made the nearly three hour drive to Durham, NC to see my all time favorite musical Wicked (yes again). My friend Kristen had been thoughtful enough to call around and find some quick options so I was not forced to eat fast food of any kind. We stopped at Panera for a quick soup and sandwich lunch.


Nikki and I had other plans since we spotted a DSW on the way in. Keeper of the time Kristen gave us 20 minutes to get our shopping fix and I ended up with some Sam and Libby ballet flats for the fall. ($12.00 YAY!)

After stopping to let Kris and I show off our matching green pedicures and green bags we were off to the show at the Durham Performing Arts Center.


The show was excellent although I was a little disappointed not to get to see Vicki Noon in the role of Elphaba. I had seen Anne Brummel in the part in Richmond and she was really great but I wanted to see Vicki just to see someone else do it. However, Anne was doing the performance during this show.  My all time favorite Elphaba though has to be Marcie Dodd- no doubt. She was the Elphaba I saw in Norfolk, VA in May of 2009. She was nothing short of amazing! Have you ever seen Wicked?  Do you remember who played Elphaba at your show? I have a little problem: Hello my name is Sara and I am a Wicked pusher. I try to get everyone to see it! You should definitely go if the tour ever comes near you!

During the long 3-hour drive back we stopped at a gas station/Dairy Queen. I was very limited in my options and my friend Kristen even suggested we should take a picture to document this little problem for the blog! All was not lost though as they did have Kellog’s protein bars. Not exactly the dinner of champs but it got the job done.


Sunday was less exciting. I had planned to blog but just never made it that far down my to do list. I should mention that when I got home Saturday night all of the new furniture was here. Woohoo! Yesterday I got the task of trying to get the house back in order. I am so excited to do “the big reveal” later this week and show off my new bedroom! However, yesterday was a headache though I did get to spend some time with the hubs watching TIVOed SNL.

Today started in a rush (me running late?? Shocking I know. ) 😉 I grabbed turkey sausage and vitatop on my way out the door.


Work was non-stop. To be fair, I never have a non-busy workday but today was just out of control busy. I spent the first 2 ½ hours on the phone before I could even start on my to-do list. Luckily all of the hustle and bustle made the day go by quickly. Before I knew it –it was lunchtime. I chose a spinach salad with deli turkey. Mmmmm.

After work I went to pick up groceries for the week and made the hubs and I some Potatoes with Spinach, tomato, onion and Italian spices, corn, and roasted garlic chicken smoked sausage. It was filling and super quick.


I should also mention that I did skip my weigh in as promised. This week is about eating healthy for health’s sake and not the scale’s sake. I am taking a personal/vacation day tomorrow because I still have so much that needs to get done at home. Since I have the day free I plan to spend a little while in the morning doing a 10K (just on my own). Its going to be the Sara Renee Run Because You Love It And Need to Make Running a Priority Again And Also It Has Been A Long Time Since You Did A Long Run and Really Need To Work On That Before Your Real 10K Later This Month 10K. Ahem. Yes. And Since I am the only one running it-that means I win which is also exciting. Hehehe. All joking aside I am looking forward to just me and the trail for 10K in the morning. I will make sure to include all of the fantastic details in tomorrow’s blog (along with my lettuce wrap recipe!). Though I am a touch jealous not to have the super cool new gadget that someone got last week. Hmmm. 😉 I am thinking of investing in one before I start training for the Wine and Dine ½ Marathon.

Be Thankful Each Day In The Month Of May: Today I am thankful for my husband. I know I technically covered the hubs under my family entry but I feel very blessed to have someone who loves and accepts me just as I am-flawed and strange and all. He takes care of me when I am sick, cheers me up when I am sad, works really hard so I can do the things I want to do. He ran a princess race with me, sits through musicals no matter how many times I make him go, he never makes me eat the smooshed eggs or burnt toast… Hes my best pal. xo

So happy Friday everyone!! My weekend is jam packed from beginning to end but I hope to get in to make some mini blog updates as the weekend goes along. As I mentioned a couple of weeks ago the hubs and I were in the market for some new furniture. Well, the new bedroom is arriving tomorrow which means yours truly had the awesome task of clearing out the bedroom today (other than the big pieces that Bry and pal Matt are taking care of tomorrow). I started out my morning with a good wholesome Ezekiel English Muffin with deli turkey, cheddar, crasins, and honey mustard. In the glass is V8 fusion not wine although wine is sounding pretty good right now. 😉

I got started with the bedroom right away. I despise having the house all in disarray (night stands in the hall, TV table in the dining room. )Ugh.  The hubs and I purchased this house two years ago and how we managed to accumulate so much stuff is beyond me.  I have this terrible habit of saving magazines with articles I like but I did the functional thing and threw them out today. 🙂 The silver lining to this mess (and there always is one) is that I found:

  • My Napoleon Dynamite talking pen
  • My fave MAC eye shadow in “Club”
  • My Glee Volume 1 Soundtrack
  • My MukLuk slippers
  • My pink pool flip flops

Now reading that I guess I answered my own question. Its me. Im the pack rat and the haver of the stuff 😉 But here is the master suite aka bedroom that is barely a smidge bigger than the others  all cleared out and ready to get fabulous-tized by the new furniture! Sorry for the crazy dark pictures. I promise the new and improved bedroom (to be revealed later in the week) will have great pics!

Covered the matress in sheets since I guess we do need to sleep here tonight. HA!

Now to clear the hall, make some lunch, and get ready for a date with my best guy. ❤ We are headed to see Iron Man 2 which I am ridiculously excited about.  This is normally not my kind of movie but I can’t lie- I have a little crush on Iron Man. It happens! Hopefully I will be on later to do a little recap of this awesome kick off to the weekend!!

Be Thankful Each Day in the Month of May: Today I am thankful for our little home. When we started looking for a house we were in a situation where we needed to move quickly. Bryan was recovering from surgery and I was house hunting alone. After oodles of terrible houses I saw this one as a “last resort”. I fell in love the second I walked in the door. Its an older home and has its flaws (one bathroom really???) but its ours and I love it. I love my red kitchen and striped walls. I love all of the furniture we’ve chosen together and the pictures on the walls. We’ve made our home here and that is something to be thankful for.

So as I mentioned in yesterday’s blog I had banked enough hours at work this week to not have to go in today. Normally on these days I will clean, run errands, etc (all things I could have been doing today). However, today I decided to have some “Me Time”. I love my friends and family as fiercely as anyone can and I love being with them but every now and again every girl needs a little time alone. I know I am busting out yet another old school Sex and The City Quote but, “The most exciting, challenging and significant relationship of all is the one you have with yourself. And if you can find someone to love the-you-you love, well, that’s just fabulous.” Sometimes you have to take a little time for you! We all need to do that.

I started my morning pretty early since Bryan was up and getting ready for work. I had some organic whole grain waffles with organic peanut butter, a touch of honey and a V8 Fusion (not pictured).

About a 1/2 hour after breakfast I headed to the gym. My trip to the gym was weird but my workout was great. We can start with the weird. I go in and see a sign that says: Members The Ellipticals have not been stolen. They are being repaired and will be returned. Thank you. Random yes? I figured they were trying to make a joke but it was just odd. I hop on one of the machines and a super muscle guy comes over and asks one of the trainer “Where are the rest of the Elliptical’s?” (Umm read the sign helloooo. ) The trainer explains they are being repaired and this guy kind of loses his mind because none are open (never mind there were 10+ treadmills and tons of bikes or stair steppers he could do instead). Anywho he starts ranting about how “f-ing ridiculous it is” and how “this is bull-s*^t”. I so badly wanted to giggle at his temper tantrum but I was scared he was going to knock me in the floor and take my Elliptical! 😉 So I kept on keeping on. I did 60 minutes of the most intense cardio I have done in ages. I felt so great when it was done.  I am so glad I took this little hiatus from running this week. I am ready to go full force back to the trails next week.

After having a handful of All-Bran crackers I showered and got ready to go out. I opted for my new flip flops today. I LOVE plaid and I love flip flops so this was a no brainer when the hubs picked them out for me a couple weekends ago.

I was feeling very Springy so I decided to pull my hair away from my face which is something I never did last summer (in the fear that my face was too chubby). Its funny how things have changed. 🙂

Too bad the weather didn’t match my happy mood. Normally my drives to Roanoke are sunny and fun but everything today was gray.

I cranked the U2 and made the best of the weather situation. At least it didn’t rain. My first stop was Bubblecake to get my fix for the week. 😉 They make the best cupcakes on the planet. I am not kidding. I of course will cut mine into halves or thirds to enjoy in calorie controlled portions BUT I did get one to enjoy in its entirety and the BBQ tomorrow. Mmmm! I will have the calories for it and I am jazzed!

After my quick stop at Bubblecake I headed over to do some shopping. I did not want to spend a ton so I was bargain hunting today. I ended up buying out of season which I do a lot. Since they were fall pieces I did not want to buy the size I am now. I am losing steadily so I bought the size I will be if I keep losing at relatively the same pace. It is not my goal size per say but rather a realistic fall goal size.

I picked up a couple of Spring shirts but then I found this cutness. I love this dress. I think it could work with a blazer at work, a colorful punch of color with a cardigan on the weekend or a shrug for a night out. The “skirt” part has pockets with casual it up a bit and I just think it’s a very cute look. Also, it must be last season because it was tagged $118.00 and I got it for under $20! Shopping Ninja I tell you!

After wandering around, trying on some clothes and shoes, and not finding a ton that I was crazy about I headed back through Macys to get to my car. On the way out I spotted a rack of these super cool kimono style shirts. They were 85% off. It was crazy. I tried one on in my current size to get a feel for the shape and they were cute. At $7.00 I could not help but pick one up for the fall. I could wear it with black pants to work or a skirt. My weekend plans would pair it with some dark denim jeans and fun shoes. Maybe my favorite find from the CASA shoe event last week.

Just a disclaimer: I am not a person who buys something just because it is a good deal. Im also not a cheapskate. 🙂 With that being said I LOVE bargain hunting. Its fun and its practical on those days when I want to get out and shop but my budget is a little tight. I had a great time trying on clothes and finding a couple cool pieces to buy.

After shopping I was really hungry so I looked around the shopping area for food.My options…

  1. Pizza??? No
  2. Chinese Food??? No
  3. Soft Pretzels??? No
  4. Fast Food??? No
  5. Ben and Jerrys??? Hmmmm 😉 No

Since I did not have time to sit down in a proper restaurant I thought “I will stop at the grocery store since there is lots of food there”. 🙂 I grabbed a huge bottle of water and some sushi.  Salmon and Avocado. This is maybe the best avocado I have ever tasted. This was a big serving so I saved 1/2 for tomorrow.

I headed back home and waited for Bryan to get home from work. We headed out to pick up some food and supplies for a family BBQ tomorrow night. I am really wanting a burger (badly) so I got some 93% lean ground beef for myself, whole grain bun, fat free chips, etc. I will at least look like I am eating what everyone else is eating!

After the hunting and gathering we had a quick dinner out. I had some veggie soup with a touch of pesto and my 1/2 of a turkey and spinach artichoke panini with tomatos and onions.

And that was my Frilly Friday! Fingers crossed there is no rain in Virginia tomorrow or Bryan will have to eat dozens of burgers and a tie-dyed color sheet cake all on his own!
