It was amazing just how fast my time in Chicago went by. With only one day left HLS roomie Andrea and I decided to have a day of shopping and general fabulousness. HLS was sponsoring a breakfast on Saturday morning but we decided to skip it and walk down to Starbucks to get a jump-start on our day. Thank goodness for Andrea’s smart phone. It got us pretty much everywhere we needed to go.

Our day of shopping was fantastic. There are so many great places to shop in Chicago. Michigan Avenue was really fun because sprinkled in among the Chanels and Louis Vuittons are affordable places like Macys, H&M, Filienes Basement, etc. There are also loads of old faves like Tiffanys and Bloomingdales. It was fun to window shop at some of the swankier joints and then make some purchases elsewhere so it doesn’t murder your bank account. My favorite Chicago purchases were a Donna Karen dress from Bloomingdales, a Lucky Brand leather bag that I got for a steal at Filenes Basement (120..00 marked down to 20.00!), some jeans, a really beautiful gray scarf, a winter hat in winter white (my
fave winter accessory color), a cute top at H&M, and the hottest COACH peep toe heels ever! I would have been content shopping for days. Sadly we need pesky groceries and electricity and what-not. 😉


We also took a champagne break during the day (basically because we could). We ventured over to Pops For Champagne which is a cute little champagne bar in the city. While we were there we split a small piece of chocolate ganache cake. It was to die for.

For our last night in the city we decided to meet up with the girls for some traditional Chicago Deep Dish Pizza. I think when you visit somewhere new trying the regional “specialty” is kind of a must. We headed over to Girodanos for dinner. The weather was perfect and we didn’t mind the hour wait. We chatted, snapped photos, and had a great time.

My time in Chicago was such a great experience. I was really forced outside of my comfort zone. I was forced to reevaluate a lot of what I have been doing with nutrition and exercise. I hope to return to HLS next summer a healthier and happier me. My final five thoughts are these:

  • Always try something new, even if you think you’ll be uncomfortable or may potentially fail. You’ll be amazed at what you are capable of.
  • Travel when you can. There is a whole world out there to explore.
  • Be good with being on your own. I traveled sans hubby and friends and I had a wonderful time.
  • Sometimes the simplest changes make the biggest impact.
  • You are worth the trouble, the money for healthy food, the time you must dedicate to working out etc. Never feel bad or guilty about those things.

3:30 am is really early (or late) depending on how you look at it yet I was up, in the process of getting dressed, and headed in Chicago for my first ever visit to the “windy city” (which as it turns out, isn’t so windy).

I normally don’t eat or drink before early morning flights so the Lynchburg, VA to Charlotte. NC and Charlotte, NC to Chicago, IL back-to-back flights were pretty miserable. (At least those parts where I wasn’t sleeping were).  But, I was in Chicago bright an early, found my ground transportation, and headed into the city.

Chicago was bustling and crowded at 9:30am and I found myself getting really antsy in the car. I texted back and forth with my roommate for the weekend, Andrea. We had never met in real life of course but had been communicating non-stop in the weeks leading up to the Healthy Living Summit (HLS). I was pretty jazzed to meet her and even though I had maybe the slowest driver in the history of the world we finally pulled up to the Congress Plaza Hotel on Michigan Avenue.

To say the hotel is interesting would be an understatement. The hotel is straight up creepy. It’s rumored to be one of Chicago’s most haunted hotels. Back in the day it was frequented by Al Capone, there is a supposed hidden passage in the hotel, and the hallways look like they are straight out of The Shining. Red Rum anyone?

As soon as I made it into the lobby I found Andrea right away. I didn’t know anyone who would be at HLS so I started introducing myself. Someone pointed out my “southern accent” first thing which I never thought I had. I kind of got a kick out of that because I am very “non-southern” in terms of my speech when compared to many other people in my life! I met several very cool bloggers including Lindsay, JT, Shannon, and of course my roomie. Everyone was so fun
and smart and health/fitness minded. It was kind of neat to find out what everyone did “in real life” for work and talk about our weekend plans. After some discussion we decided to meet up with Angela and several other girls to do some walking, take some photos, and have some lunch.

Chicago was hot on Friday. It’s that simple. I of course had on a black dress so I felt like I might just burst into flames at any moment. But it was my first time in Chicago so I was determined to get in some sight seeing. Chicago is a really visual city. I felt like there was something to see around every turn. (like that random eyeball or some really cool building)

We walked down to Millennium Park to check out some of the art and other cool sights.



I love the fountains right at Millennium Park. There were tons of people running through the water and playing under the fountains. The kids were loving it. The fountains reflect faces (which I hear is pretty cool at night) and the mist felt fantastic. I could not resist taking off my shoes and getting my toes wet.


After a little more sight seeing we made it to “The Bean”. The Bean is actually something called  Cloud Gate. However, it is affectionately referred to as “The Bean” which makes me laugh. I love nicknames for people and things so this was cute. It’s hard not to be fascinated by The Bean. You can take groovy photos of the city, each other, or even yourself when you are under or near The Bean. I dare you to get close to it and NOT take a photo of yourself. You totally will.


As cool as The Bean was I totally lost interest because I was starving. Luckily a couple other girls were feeling my pain so we took off and headed to lunch. We stopped at the first decently healthy option we stumbled upon which was Café Bachi. I picked up a turkey, honey, and pickle hot pressed panini, fruit salad, and juice.


Can I just say how much fun it is to eat lunch out with other food/health bloggers??? Everyone photographs their food. I love that!

After lunch we headed back to the hotel for a much needed nap. Much needed. Did I mention it was much needed? Andrea and I had been up for hours plus we had gained an extra hour with the time change so we really needed a power nap. Luckily we woke up in plenty of time to head out to LaSalle Power Company for a cocktail event hosted by Open Sky.

You know I love Open Sky (visit my store here) and they did a wonderful job of making us feel welcome. The food was great, the location was fun, and I heart free drinks (hellooo margarita).


This was technically our dinner so I grabbed a mini turkey burger, some roasted red pepper hummus, chicken skewers, salad, and a small piece of vegetarian quesadilla (not pictured). Very Yummy!

The party was a great time to meet the people whose blogs I read everyday or every week. I was super excited to meet Melissa from Crunches for Cupcakes (I felt like a stalker making sure it was her before I mosey-ed over to say hi), Leslie from And Her Little Dog Too and Caitlin from Healthy Tipping Point.


Meeting Caitlin was a really cool experience. Caitlin has written a book and is extremely successful. She was completely down to earth and very approachable. Meeting her has definitely 110% gotten me on board with the Operation Beautiful movement. It’s a great message and I can’t wait to order my copy of her book. It was also inspiring to me because (as you regular readers already know) I struggle a lot though this fitness journey/process. Having someone sort of reinforce the positives is huge! This was just the first of many inspiring moments for me throughout the weekend.

The rest of the night was fun and everyone seemed to have a great time.


After the party we took a cab back to the hotel to get some rest. The 2010 Healthy Living Summit would start bright and early. Stop by tomorrow for my tales of swag, oatmeal, core yoga fusion, a break-down, a vegan bar, a shift in  focus, and my tiny tiny computer envy.

I Heart Chicago

So I am officially back in Virginia after a long weekend in one of the coolest cities I have ever visited. The Chicago trip was amazing for many reasons and I cannot wait to write my trip re-cap and share the weekend with all of you.  Even though there were a couple of  difficult moments for me at the 2010 Healthy Living Summit (self-discovery can be a little rough friends!) and some spookiness (Congress Plaza Hotel was straight up out of The Shining. Don’t believe me-just look at those elevators!) the weekend could not have been a more positive experience for me.

While I hope to get my Day 1 trip recap up tonight I thought I would leave you with the top 5 random things I learned in Chicago (non summit related).

1. The Victoria Secret in Chicago on Michigan Ave is so amazing I would totally live there (minus all the under-roos of course).

2. Vegan food isn’t really my thing.

3. It is very very warm at “The Bean

4.The Congress Plaza Hotel is, no doubt in my mind, haunted.

5. It’s always best to go shopping with friends who WILL talk you into the hot Coach shoes with the silver heels!

Also the top 5 things that are now on my “blog writer” wish list

1. Running in Pink Project Business Cards (all of the girls had cards to trade with vendors and one another. Ooops. Live and learn)

2. A tiny “net-book” or mini laptop that I have already named “baby dell” even though I may not buy a dell at all.

3. A new ginormous travel tote that will fit my “baby dell”, a change of clothes, books, and other goodies. (I’m thinking I would like  a Louis Vuitton since I hear you can cram 225 pounds of stuff into the bag without snapping the straps-SCORE).

4. Some new yoga pants

5. A fabulous camera

So I guess it’s a common ailment that right before vacation it is hard to think of anything else. The trouble with that is normally the week before vacation brings an extra busy work-week. At least that seems to be the case for me this week. I am trying to avoid going in on Friday so I have been doing 10-hour days this week. (Yes that is just as fun as it sounds). But, I only have one left, a normal 8-hour day on Thursday and then I am beach bound! (Well first I am pedicure bound because my toes are not looking their most fantastic). I am thinking “For Audrey” as my beached out toe color. What is your favorite pedicure color?

My 2.5 miles were all done at the gym today. It rained again. This seems to be a pattern on Tuesdays. The run went well though I have to admit I am feeling a little lazy today. I am blaming the rain.

Tonight I am making a to-do list for both my beach trip and my upcoming Chicago trip. I cannot believe The 2010 Healthy Living Summit is right around the corner! I am so excited to meet the girls who write some of my favorite blogs. I asked my husband if this made me a geek and he said yes. Ahem. I said I will just have to make geek chic. 😉 Thankfully my Healthy Living Summit roomie does not seem freaked out by my now daily emails. Im an excitable person what can I say?

The hubs and I are currently doing that super fun “we are leaving for a week so lets get creative and eat the random items in the house so nothing goes bad” thing. Tonight’s creation: Cheesy Mac with Veggie Pasta. 🙂

This is a very simple recipe. Simply take 1 box of whole grain pasta (or in this case veggie delight pasta)and prepare as directed. In a large skillet combine ground turkey, sliced onions, and any other veggies you have laying around. In a 2nd skillet make a béchamel (white cheese) sauce or simply buy a jar of your favorite store brand cheese sauce. Drain the meat mixture, stir in the cheese, stir in the prepared pasta and that’s it!

Now on to watch some of my new favorite cheesy show with the hubs… The Gates. Have you seen it?

So I am sure you are looking at my title thinking there is no way she’s doing that, and you’re right. My husband is. He started the P90X program this week. His motivation to take this on inspires me to work even harder. Mostly because I think its cool he has taken on such a challenge but also because he’s going to be in killer shape when it’s over and finally because he’s threatened to “smoke me” at our next ½ marathon. We’ll see. 😉 I like having the extra motivation. What do you use for a little jab of motivation when things get tough?

I wanted to share last night’s dinner with you. The hubs and I bothhad difficult days at work so I wanted something easy, not calorie laden, and something that involved French Fries. (Ahem. I know, I know). So I made Buffalo Sloppy Joes. *My modification omitted the cheese but I did pile on some extra pickles. I also only used ½ the chicken broth called for and a little extra hot sauce. I had a side of fruit and some organic shoestring fries (baked of course) with plenty of mustard and ketchup for dipping. Yum!

Tonight’s dinner is not quite as exciting. I made some of my “Greek-ish” rice. I start by putting some olive oil in a pan and cooking up some diced onion. To that I add 1 box of 10 minute whole grain rice and allow it to toast up. I add 1 box of chicken (or veggie) stock and cook as directed. Once the rice is fluffed I toss in some tomato basil feta and pine nuts. You can also toss in some chopped baby spinach leaves if you wish. To go along with this I made some cranberry BBQ baked chicken.

I also had a frosty mug of diet grape soda. This was so good. Im not even kidding. It was just what I was wanting. 🙂

My workout was a hard 60 minutes at the gym. I am looking forward to running and body pump tomorrow.

I have 2 main goals tonight
1.      To get my ticket for the Healthy Living Summit In Chicago
2.      To find an at-home scale that is accurate.

Does anyone have a home scale they would recommend?
